Healthy fruit and nut muffins

Healthy fruit and nut muffins

1    cup of fruit medley
3/4 cup brown or raw sugar
1    cup self raising flour
1    cup dessicated coconut
1    cup grated carrot
1/3 cup pepitas(pumpkin seeds)
1/3 cup sunflower seeds
3/4 cup pecans or walnuts
1    teaspoon cinnamon
2    eggs
125 ml or 1/2 cup vegetable oil (I use grapeseed oil but you can use another one - just make sure it doesn't have a strong taste - Olive oil tends to have too strong a flavour for sweet foods)
Preheat oven to 180C or 350F
Grease a 12 cup muffin tray
Chop nuts and mix dry ingredients in a bowl.
Add eggs and oil and mix together
Spoon mix into muffin tray and press gently to ensure ingredients are together.
Bake for
approx 30 minutes or until brown and a scewer inserted in the muffin comes out clean.
Remove from oven and allow to cool for 5 minutes before removing.

Enjoy!

new blog I've found

The room I sew in has been used as a guest room for the past few days so no sewing but I would like to share a new blog I've found.  It's called http://www.womenlivingwell-courtney.blogspot.com/
It's a very encouraging blog with links to videos that are also very encouraging.  I am really enjoying reading the articles courtney has on there .

baby bibs

I am going to be a grandma in the new year! - So I am looking for baby fabric now and have lots of ideas for making all sorts of baby things.
This is  a set of bibs that I have just made.  I got the pattern from http://www.nicolemdesign.com.au/. in her tutorials section called a 'fabulous fifties bib'.  Nicole's website has a great selection of sewing tutorials which I have found very useful. I also have some of her handbag patterns, which I plan to start making pretty soon considering I bought them 2 years ago!! Yes time time does get away from me but at least the sewing machine is out and I am sewing.  These bibs were easy to make, just follow the instructions correctly. I think I'll make some more!

tea pot time

The temperature has dropped considerably again this week - Just the time to catch up on some knitting.  I went a bit tea cosy crazy a few weeks ago and knitted covers for some of my tea pots.
One came from a pattern from http://www.coatscraft.co.uk/ called "Rowan".  I then added the pompoms.
Another I created myself doing a pattern of 4 purl and 4 plain with a variegated wool.
The third used bobble wool from Lincraft.
They were so much fun to make and really didn't take very long and look so pretty on the table.

oven mitts

I am trying to do at least one sewing task a day.  I don't have to finish the project, I just must do something towards completing it.
My first completed task was a set of oven mitts. I was quite happy with how they turned out.

Now is the time

Now is the time, to dust off the sewing machine and start sewing.  After years of too busy, to sew, I need that time for me.  The boxes of fabric are open, the shuffling through cupboards to find those hidden places where I have stashed away those precious pieces of fabric, put away for another day, has started.  How exciting to be surrounded by a myriad of colours and textures.  Where to Start?  I just can't decide - but decide I MUST  or they will all be put away for another day and that just can't happen.
